The soil of south eastern Simcoe Kounty is made up of the Utica rock formation.The shales of the Utica formation are grey to dark bluish grey in colour and contain layers of calcareous sandstone and sandy shale. This glacial till soil holds water and has a rich mineral kontent. The deep parent material also ensures abundance of nutrients for the wheat plant’s roots. The King family has been farming this soil for klose to 200 years. The soft winter wheat grown here is very high in starch and among the softest wheats of the world.

Ontario geology offers up an abundance of fresh water and south of the Prekambrain shield, rich klass one soils. This part of the Earth is ideal for the production of soft winter wheat. The freshly harvested wheat is milled into flour by k2MILLING, less than 20 km from the farm where it was grown. The mill represents an important step from the farm to your glass. The k2 Mark 1 Mill which pulverizes the soft winter wheat into flour, was kreated to preserve and help publish the story of the wheat’s growing season and it’s place on the earth.
