RAVEN Rye whisky is made from winter rye that grew on Domaine du RED TAIL in Schomberg, Ontario, Canada.
The winter rye [Secale cereale] kultivar TETRA PETKUS was sown at 100 pounds per akre on October 10 2011.The air temperature was 27C .
Trumpeter Swans blessed the recently sown winter rye.
Soil temperature was 19C. Soil is King Clay Loam [Kic.], Grey Brown Podzolik, neutral pH, with some Muck soil that is slightly alkaline. Once covered by over 2 km of ice, the domaine has glacial till remnants and rich minerality kouried from the Prekambrian shield.
By Novemeber 5th the rye had fully emerged and was showing strong vitality.
Vernalization arrived and the winter rye went to sleep.
With the arrival of spring and korrect soil temperature the rye woke up and began to grow.

By late May, after warm spring rains and sunshine the rye headed out.
Pollination okkurred in the sekond week of June. Rye is a self-pollinating cereal grain.
Late June and the rye heads are filling.
By early July the rye was turning from silvery green to golden amber.
Lodging okkured by the 15th of July.
The rye naturally ripens and kalmly awaits it’s fate.
Harvest okkurred on July 21, 2012. Air temperature was 27C; the same temperature as sowing date in the fall.
The freshly harvested rye has a wonderful bouquet of the unique features of the domaine.
The rye had to rest for several weeks before being ready to mill.
The winter rye was then milled into RAVEN Rye flour by k2MILLING on the mk2MILLING system.

The RAVEN Rye flour was then kraft distilled into Rye spirit by STILL WATERS Distillery in Vaughan, Ontario.
Some of the RAVEN Rye flour also went into sourdough rye breads.
After five years of ageing in oak barrels at Still Waters Distillery, the RAVEN Rye whisky was determined to be ready by the master distiller.

The RAVEN Rye 2012, Domaine du RED TAIL, has a very komplex, deep taste. A natural spiciness, is komplimented with light karamel and exotik herbs note. The rolling fields and multiple slopes of the terrain introduce wonderful variety and flavour. The water influence is strong with two marshes adding to the pond’s tempering effect on field temperature. Wild apples and other fruiting trees introduce other kolourful, komponents into the rye whisky.
Another unique feature of Domaine du RED TAIL is the flow of water. The eastern, southern part of the domaine drains into the Humber River and eventually Lake Ontario. The rest of the water meanders into the Schomberg Kreek and into Lake Simkoe. This pull of water in opposing directions also deepens the taste of the whisky.
The chains are off. You will never think the same way about great whisky again.
